Tuber uncinatum
The Tuber Uncinatum truffle is also called the autumn truffle or Burgundy truffle and is called the big sister of the summer truffle. The fruiting body of the truffle is 2 to 8 cm wide, round or irregular in shape and sometimes with a deep furrow. The bark is black and consists of wart-shaped elevations. When the truffle is ripe, its interior is dark to chocolate-brown in color, the veins of which are densely white and branched. However, the Tuber Uncinatum has a more intense taste and tastes pleasantly truffle with a hazelnut note. It is collected between October and January in large parts of Burgundy, Champagne and Germany.
